Oregano blooms are part of the plant's natural process and not damaging unless you let it go to seed. In that case the older leaves will be bitter. They're really quite tasty and aromatic, too. Consider using some in a marinade or to steep into salad oil. Do trim them off of the plant and provide a little nitrogen fertilizer such as cottonseed meal to stimulate new leaves.
