Put these Herbs to Work!

In a 2 cup measuring cup:

½ cup olive oil

6 peppercorns

1 clove garlic, crushed

¼ tsp each thyme and basil, chopped fine

Couple of sage leaves, crushed

1 green onion, chopped fine

2 dashes soy or Worcestershire sauce

1 thin slice fresh ginger

¾ cup rice wine vinegar or cider vinegar

½ cup white wine or water

This marinade will coat 3-4 chicken breasts or catfish fillets. Let it do its work for 4-6 hours, then drain and bake on a rack in a shallow pan at 350 degrees until the chicken juices run clear or the fish flakes nicely.
